Recipe Ingredients for Balsamic roasted potatoes

2 lb red potatoes, cut into thin wedges
3 T olive oil
5 cloves garlic, crushed
3 scallions, chopped
1 t kosher salt
1/2 t pepper
1 t fresh rosemary
1 t fresh thyme
2 t fresh basil
1/4 c balsamic vinegar

Recipe Directions for Balsamic roasted potatoes

  1. Preheat oven to 400 F.

  2. Heat oil in pan, add potatoes, scallions, garlic, rosemary, basil, and thyme. Cook until potatoes are warm, 2-3 minutes

  3. Transfer potatoes to a cookie sheet, spreading out in a single layer. Bake for 30 minutes, flipping halfway through.

  4. In a large bowl, mix the balsamic vinegar, salt, and pepper.

  5. Remove potatoes from oven, leave the oven on, transfer them to the bowl to coat, return them to the cookie sheet, and cook for another 8 minutes or so.
