2 small sweet potatoes, or 1 large sweet potato 1 large onion, chopped 2 medium carrots, chopped 1 lb. boneless, skinless chicken breasts, cut into small cubes Freshly ground salt and pepper to taste 3 tbsp. white balsamic vinegar

2 medium (2" dia, 5" long, raw) Sweetpotato
1 large Onions
16 oz (raw) Chicken
0.5 tsp Pepper, Black
3 tbsp Vinegar Balsamic
1 cup, chopped Carrots

Recipe Directions for Balsamic Roasted Chicken & Sweet Potatoes

  1. Spray a medium non-stick pan with non-stick cooking spray. Add sweet potatoes, onion, and carrots; cook over medium-high heat for 10 minutes stirring every few minutes. Tent lightly with foil and cook for 10 minutes more, stirring occasionally.

  2. While vegetables are cooking, sauté the chicken and season with salt and pepper to taste; cook and stir for 5 to 7 minutes or until cooked through and golden brown.

  3. Stir chicken into vegetables and drizzle with vinegar; cook for 5 minutes more.

  4. Serve over brown rice and steamed vegetables, if desired.
