Made for a tournament for myself as a lighter option.

Recipe Ingredients for Balsamic Pasta Salad

0.5 box Rotini
1.5 oz Peppers, Sweet, Red
1 oz Red Onion
3 tbsp Olives, Ripe, Canned (Small-extra Large)
1 oz Carrots, Baby
1.5 oz Feta Cheese
240 cal Light Dressing

Recipe Directions for Balsamic Pasta Salad

  1. Cook pasta according to directions.

  2. Chop peppers and onions. Slice olives. Shred carrots or cut into small pieces.

  3. Drain pasta, do not rinse.

  4. Add in all vegetables plus feta cheese. Dress with 2 - 3 tbsp of dressing, until lightly coated.

  5. Let sit in refrigerator at least one hour or over night. You will want to add another tablespoon or so of dressing usually because the pasta will soak up the liquid.
