A tangy and slightly sweet chicken that is a quick but tasty weeknight meal.

Recipe Ingredients for Balsamic Chicken

16 ounces boneless, skinless, chicken breast, cut into chunks
1 onion, thinly sliced
1 1/2 clove garlic, minced
2 tbsp olive oil
14 1/2 ounces diced tomatoes, canned
14 1/2 ounces artichoke hearts, canned, quartered
1/4 cup balsamic vinegar
1/4 cup chicken broth
1 tsp basil, dried
1 tsp rosemary, dried
1/2 tsp thyme, dried
1/2 tsp salt

Recipe Directions for Balsamic Chicken

  1. Add oil to the pan throw in the onions and the chicken. Brown the chicken (but don't cook all the way through). Halfway through browning the chicken, throw in the garlic.

  2. Once the chicken is browned, add the vinegar, tomatoes, artichokes, and herbs.

  3. Simmer 15 minutes or until the chicken is cooked all the way through. Serve over rice or pasta.
