Is it a chili? Is it a soup? Who cares it's delicious, filling, spicy, low in sodium and high in fiber and best of all super low in calories per generous serving!

Recipe Ingredients for Balsamic Black Bean and Tomato Chili Soup

12 serving El Mexicano Black Beans
1.5 cup Vegetable Tomatoes Sliced Stewed
1 large Onions
2 serving Heirloom Tomato
5 serving Balsamic Vinegar
2 tbsp Honey Squeezable

Recipe Directions for Balsamic Black Bean and Tomato Chili Soup

  1. Cook black beans until soft then add them to crockpot on high setting.

  2. Cook red onion until clear in one tbsp of evoo. Add some apple cider vinegar as well.

  3. Add 5 Tbsp of Balasamic vinegar to the beans.

  4. Add the can of tomatoes, liquid and all (for the nominal sodium content) and chop a big tomato and add it as well to the crockpot.

  5. Add the onions when they're done along with the honey and these spices: Cumin, black pepper, cayenne, garlic powder, onion powder, nutmeg, cinnamon, paprika, Ms. Dash sodium free table blend or steak blend, and a dash of liquid smoke. Then add these herbs: Cilantro, Thyme, Rosemary and Dill.

  6. Add two cups of water and stir well. Cook on High for a few hours until the flavors come together then let sit for the rest of the evening on low to get them nice and combined. Makes 8 good sized "bowl full" servings (about on par with a can of soup per serving).
