A soup so mind blowingly good you won't understand how it's so low in sodium and so high in fiber. This is the stuff dieter's dreams are made of. The secret is a spoonful of honey added to play off the sweetness of the tomatoes and balsamic vinegar. Low calorie, low fat, low sodium, high in fiber and vitamins this one is a powerhouse when you want to get a square meal yet are watching your calories.

Recipe Ingredients for Balsamic Bean and Tomato Chili Soup

468 grams Pinto Beans Frijoles Pintos
1 medium (2-1/2" dia) Onions
75 g g) Vinegar Balsamic
430 1/2 grams Vegetable Tomatoes Sliced Stewed
1 serving Clover Honey
1 serving Extra Virgin Organic Olive Oil

Recipe Directions for Balsamic Bean and Tomato Chili Soup

  1. Cook the beans according to your preference first before adding to the crockpot.

  2. Chop the onion and saute in the olive oil until translucent then add to crockpot.

  3. Add the canned tomatoes and all the other ingredients to the pot.

  4. Add these spices: Garlic Powder, Onion Powder, Black Pepper, Cayenne Pepper, Cumin, Dill, Cilantro, Rosemary and a little ginger to your taste. The heat comes from the Cayenne in this dish and the herbs give it much of it's flavor with Cumin being the main spice ingredient for the "chili" taste.

  5. Cook on High until hot enough and the flavors have combined, a couple hours should be fine then you can simmer the rest for a couple more hours on low to help the flavors interact.
