Recipe Ingredients for Balsamic baked vegetables

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 small Squash, Summer, Zucchini, Includes Skin
3 oz Yellow Squash
1 medium (2-1/2" dia) Onions
1/2 small Peppers, Sweet, Red
1 oz Orange Hothouse Bell Pepper
1 oz Peppers, Sweet, Yellow
3 tsp California Style Minced Garlic made from Fresh Garlic
2 tsp, leaves Thyme, Dried
1 serving Balsamic Vinegar
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Balsamic baked vegetables

  1. Prepare all the vegetables cutting in similar size. Toss the vegetables with the rest of ingredients, place them in a baking plate and place in the oven for 20 minutes or untill golden.
