Stews by Jenna Holst. Absolutely delicious!!! Serve with rice for 8 nice sized or 10 smaller servings and without rice for 6 servings. Calculated for eight, without rice. Completely scrumptious stew, great complex flavors. Garnish with chopped mint leaves.

Recipe Ingredients for Balinese Beef

2 tablespoons vegetable oil
2 pounds beef, round, cut into 1-inch cubes
8 scallions, white part only, thinly sliced, green part reserved and sliced for garnish
1 tablespoon ginger, use a 2-inch piece, minced
4 cloves garlic, minced
1 jalepeno pepper, 2 if preferred, may use serranos, seeded and diced
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
3 tablespoons dark brown sugar
2 tablespoons soy sauce
2 tablespoons lime juice
2 1/2 cups chopped tomatoes, about 6 medium tomatoes, peeled, seeded, and chopped
2 green bell peppers, seeded and sliced
1/4 pound mushrooms, sliced

Recipe Directions for Balinese Beef

  1. In a stewpot over medium heat, heat the vegetable oil. Working in batches, brown each piece of meat on all sides. Add the white part of the scallions, the ginger, garlic, jalepeno, cumin, and cayenne. Cook, stirring often, for 2 minutes.

  2. Add the brown sugar, soy sauce, lime juice, tomatoes, and bell peppers, and stir to combine.

  3. Reduce the heat to medium-low. Cover and simmer until the meat is tender, about 1 1/2 to 2 hours. Stir in the mushrooms and cook, uncovered, for 10 or 15 minutes longer.

  4. Garnish with the reserved green part of the scallions and mint.

  5. This can be made ahead, and reheats extremely well! It can also be frozen for 2 to 3 months.
