Recipe Ingredients for Baklava

1 1/2 cups sugar
1/2 lb almonds, finely chopped
1/2 lb walnuts, finely chopped
1 1/2 tablespoon cinnamon
3 teaspoon ground cloves
3 sticks unsalted butter, melted
1 lb phyllo dough

Syrup:
2 cups sugar
1 1/4 cups water
2 tablespoon honey
2 teaspoon fresh lemon juice
1 teaspoon cinnamon stick
1/2 teaspoon cloves

Recipe Directions for Baklava

  1. Combine nuts, sugar, and spices in bowl and set aside.

  2. Unroll the fillo dough on a flat surface and keep it covered with waxed paper and/or a damp towel so it doesn?t dry out and become brittle. Using a pastry brush, brush a 15 x 11 x 3? baking pan with some melted butter. Lay a fillo sheet on the bottom of the pan, brush with butter and repeat using a total of 7 sheets. Sprinkle ~1 cup of the nut mixture over the top sheet. Layer 3 more fillo dough sheets, brushing each with butter and sprinkle again with nut mixture. Continue until ~7 sheets are left (they form the top layer) and all the nut mixture is used up ? this usually makes about 5 layers of nut mixture + a top + a bottom. Top with the final 7 sheets, each buttered.

  3. Syrup: in a sauce pan, combine the sugar, water, honey, lemon juice, whole cinnamon and whole cloves, bring to a boil. Reduce heat and simmer for 15 minutes. Remove the cinnamon stick and cloves and let cool.

  4. Preheat oven to 300 degrees. Using a long, sharp knife, cut the baklava into small diamonds. Starting at one corner, cut diagonally through the baklava to the opposite corner. Cut straight down until the tip of the knife touches the bottom of the pan and keeping the knife straight, cut in a straight line all the way. Cuts should be about 1 - 2? apart. Turn pan and cut same number of lines on the diagonal to the first set.

  5. Take remaining melted butter, reheat to bubbly and pour over the top of the pastry. Bake for 1 ? 1 hours or until evenly golden and flaky. Remove to a rack and spoon the cooled syrup over the entire pastry. Cool in the pan, then serve pieces individually.

  6. Yield: 55 ? 60 diamonds
