Recipe Ingredients for Baked Zucchini Stuffed with Italian Sausage

15 Mild Italian Sausage links (half package Johnsonville, two and half links - 675 calories' worth)
38 oz zucchini (one 3 lb zucchini)
12 1/2 oz mixed vegetables (8 oz Safeway Organics mixed frozen veggies - 125 calories' worth)
1/2 can cream of mushroom soup (condensed)
1 1/2 oz green bell pepper
2 1/2 oz onion
2 1/2 oz asiago cheese, shredded (260 calories' worth)
1 tsp italian seasoning
1/2 tsp minced garlic
1 tbsp olive oil

Recipe Directions for Baked Zucchini Stuffed with Italian Sausage

  1. Preheat the oven to 400 degrees Fahrenheit. Thoroughly wash the zucchini. Cut your large zucchini (or multiple small zucchinis) into halves and scoop out and discard the seeds.

  2. Saute the olive oil, onion, bell pepper, frozen vegetables, and seasonings in a medium skillet. Take half of the zucchini and microwave for 2.5 minutes, remove, then cook other half of the zucchini for the same amount of time. When zucchinis are softened, place in a non-stick baking pan (or a lightly oiled baking dish), side by side.

  3. Add the cream of mushroom soup to the vegetable mix, blend, and cook lightly over medium heat, stirring frequently. Avoid burning by reducing heat, if necessary. Cut the sausages into half-inch slices, and add to the mushroom soup/vegetable mix. Keep stirring, and cook until sausage is semi-done; then pour into the hollowed zucchini halves.

  4. Shred the asiago cheese on top of the zucchinis.

  5. Place into oven for 15 minutes at 400 degrees; then decrease heat to 350 degrees until zucchini is quite softened and sausage is cooked (approx. 45 min.)
