halved zucchini baked with turkey sausage, tomato, cheese, onion and fresh herbs

Recipe Ingredients for Baked Zucchini

2 medium Squash, Summer, Zucchini, Includes Skin
170 1/10 grams Lean Turkey Italian Sausage sauteed
1/2 cup Reduced Fat Mozzarella Shredded Cheese
1 medium Tomatoes
1 cup, chopped Onions
1 clove Garlic
1 1tsp Olive Oil
3 serving Organic Olive Oil Cooking Spray
1 tbsp Parmesan, Grated Cheese
1/2 oz Oregano
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for Baked Zucchini

Halve zukes lengthwise, score and scoop out insides. Place zucchini halves in a baking dish. Saute insides in olive oil with sauteed Italian -seasoned ground turkey, onion, garlic, tomato, oregano, basil, salt and pepper until soft but still a little firm. Spay olive oil onto cut zucchini and scoop mixture into zuke halves and top with mozzarella and parmesan cheese. Bake in 350 oven for approx. 25 minutes. Serve with hot cibatta bread.
