A delicious way to use up all those zucchini

Recipe Ingredients for Baked Zucchini

1 large Squash, Summer, Zucchini, Includes Skin
8 oz Cream Cheese
2 cup Cream, Sour, Reduced Fat, Cultured
2 tsp Paprika
1 tsp Garlic Powder
3 tbsp Parmesan, Shredded Cheese

Recipe Directions for Baked Zucchini

  1. cut off ends of zucchini, then slice into two halves

  2. remove seeds

  3. mix remaining ingredients in bowl, then spoon into center hollow

  4. place on deep cookie sheet or baking dish cheese side up, then pour water around zucchini until approx 1/2 depth

  5. bake at 350 degrees until zucchini is tender, about one hour

  6. slice into two inch servings
