An absolutely delicious alternative to regular fettuccini alfredo. You wont even miss that old stuff. (Makes 1 serving)

Recipe Ingredients for Baked Zucchini Fettucini

1 medium Squash, Summer, Zucchini, Includes Skin
56 7/10 grams Boneless Skinless Breast Fillets
1 individually wrapped package(28 g) Light String Cheese
5 7/10 grams Parmesan, Hard Cheese
1/4 cup Pasta Sauce
1 1tsp Olive Oil

Recipe Directions for Baked Zucchini Fettucini

  1. Cook chicken breast however you'd like, chop it up and set it aside (I like to BBQ it with some fresh lemon slices)

  2. Julienne the zucchini (cut into long thin strips, like fettucini)

  3. Add the julienned zucchini to a pan with 1 tsp olive oil, and some salt and pepper.

  4. Cook zucchini on medium heat until no longer crunchy and slightly soft to the touch.

  5. Add cooked zucchini to a small (individual sized) microwave safe dish

  6. Top with the chicken, 1/4 cup of the sauce, 1 string cheese, and 1 tsp parmesan cheese

  7. Bake on 400 until cheese is completely melted

  8. Finish in broiler if you like.

  9. Enjoy!
