Baked ziti with zucchini. Really good!

Recipe Ingredients for Baked Ziti and Summer Veggies

2 cup, chopped or sliced Tomatoes, Red, Ripe
3 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 cup, chopped Onions
2 serving Penne Rigate Whole Wheat Macaroni
4 serving Spartan Mozzarella Low Moisture Part Skim 1/4 C
1 tbsp Olive Oil
1 large Egg, Whole
1 serving Parmesan Romano and Asiago Shredded
1 serving Miceli's Low Fat Ricotta
2 tbsp Basil, Fresh
0.13 tsp Pepper, Red Or Cayenne
2 tsp Oregano
2 serving Garlic Cloves

Recipe Directions for Baked Ziti and Summer Veggies

  1. 1. Cook pasta according to package directions, omitting salt and fat, drain.

  2. 2. Preheat Oven to 400

  3. 3. Heat a large skillet over medium-high heat. Add oil to pan. Add squash, zucchini, and onions; sauté 5 minutes. Add tomato and garlic; sauté 3 minutes. Remove from heat; stir in pasta, ˝ C mozzarella, herbs, 1/2t salt and pepper.

  4. 4. Combine ricotta, remaining salt and egg. Stir into pasta mixture. Spoon into a 8 inch square glass or ceramic baking dish coated with cooking spray; sprinkle with remaining mozzarella. Bake at 400 for 15 minutes or until bubbly and browned. Yield: 4 servings (serving size: about 1 ˝ cups)
