Recipe Ingredients for Baked Ziti with summer vegetables

1 medium Squash, Summer, Zucchini, Includes Skin
1 medium Squash, Summer, All Varieties
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1/2 cup chopped raw Vidalia Onion
2 serving Olive Oil
1 cup Natural Cheese
2 tbsp Basil, Fresh
0.5 oz Oregano
4 oz Ziti
1/4 cup Part Skim Ricotta
1 large Egg, Whole
2 clove Garlic

Recipe Directions for Baked Ziti with summer vegetables

  1. Sautee zucchi, squash, pepper, in olive oil for about 5 minutes, add garlic, sautee 3 minutes.

  2. 2. Remove from the heat and add 1/2 mozzarella cheese and herbs, stir and then add ricotta and egg. spoon into greased 8-inch square baking dish and top with remaining cheese.

  3. 3.Bake in 400 degree oven for 15 minutes or until brown and bubbly.
