Recipe Ingredients for Baked Ziti Soup

1 lb ground turkey
1 onion, chopped
1 pepper, chopped fine
2 1/2 tsp minced garlic
1 tsp thyme
1 tbsp light brown sugar
32 ounce fat-free chicken broth
29 ounce petite diced tomatoes
16 ounce tomato sauce
2 tsp Italian seasoning
1/2 teaspoon salt
4 oz. whole wheat penne, uncooked
1/4 cup Parmesan cheese
3 oz shredded part skim mozzarella cheese, divided

Recipe Directions for Baked Ziti Soup

In a large Dutch oven, combine turkey, onion, bell pepper and garlic. Cook over medium heat for 8 to 10 minutes, stirring occasionally until turkey is browned and crumbles. Drain well. Stir in thyme, brown sugar, broth, tomatoes, tomato sauce, Italian seasoning and salt. Bring to a boil, then reduce heat and simmer 20 minutes. In the meantime, cook pasta according to package directions in a separate pan. Drain. Add cooked pasta to soup and stir in Parmesan cheese. Top each bowl of soup with shredded mozzarella.
