Rich in vitamins A, C, and K, lycopene, calcium, tryptophan, manganese, isoflavors, and fiber. Yummy vegetables, lots of protein and fiber= a healthy choice!

Recipe Ingredients for Baked Ziti

1 lb ziti
1 cup firm tofu
20 oz spaghetti sauce, meatless, canned
1/2 cup carrots, mashed
1/2 cup mashed sweet potatoes
1/3 cup grated parmesan cheese
3 cups shredded mozzarella cheese

Recipe Directions for Baked Ziti

  1. Preheat oven to 375F. Spray 9x13" baking dish with oil.

  2. Cook pasta according to directions, until slightly firm. Place in sprayed 9x13" baking dish. Mix tofu, spaghetti

  3. sauce and pureed carrots and sweet potatoes in bowl. Toss pasta with mixture and 1 cup of mozzarella. Top pasta with combo of parmesan and 2 cups mozzarella, sprinkling evenly over top.

  4. Cover with foil. Bake 30 minutes at 375F. Uncover. Bake another 10-15 minutes or until top is lightly browned.
