Baked Ziti, borrowed from Jessica Seinfeld. I made this not long ago and wanted to double check my serving size and calori count.

Recipe Ingredients for Baked Ziti

1/2 cup Carrots
1/2 cup cauliflower
16 oz Mozzarella, Part Skim Milk Cheese
2 cups Ricotta, Part Skim Milk Cheese
14 oz Ziti
2 eggs
1/4 cup parmasan cheese
15 oz pasta sauce

Recipe Directions for Baked Ziti

  1. steam carrots and cauliflower.

  2. add water and carrots, and blend to make puree

  3. add water and cauliflower, and blend to make puree

  4. add carrot puree to sauce and place approx half of suace on bottom of baking pan.

  5. then layer half of the pasta.

  6. mix half of the mozz, with ricotta, egg, and cauliflower then place in baking pan.

  7. layer the rest of the pasta.

  8. top with the rest of the mozz and the parm cheese.

  9. bake 450 for 30 min until cheese is melted and warm.
