A tasty and healthy animal friendly lunch or dinner that rivals the original fat-fest. Substitute vegan cheese and mayo for a super healthy PETA style feast!

Recipe Ingredients for Baked Vegetarian Reubens

1 cup sauerkraut
5 tbsp Bacos Bits
1/4 cup mayonaise
4 oz swiss cheese, shredded
1/2 cup shredded carrot
12 slices pumpernickel bread

Recipe Directions for Baked Vegetarian Reubens

  1. Mix together first five ingredients in a medium mixing bowl. Let the mixture sit if you like chewy bac'n, go on to the next step quickly if you like it crunchy.

  2. Equally divide the mixture onto 6 slices of un-buttered pumpernickel bread. Top with another slice and bake in a 350 degree oven for 5 min. Flip and bake another 5 min. Slice sandwiches in half and serve hot.
