Recipe Ingredients for Baked Vegetables

1 Red Bell Pepper
1 Zucchini
1 Red Onion
1 tbsp olive oil
1 pinch salt
1 pinch black pepper

Recipe Directions for Baked Vegetables

  1. Rinse vegetables and preheat oven to 200?C.

  2. Cut the zucchini along its length into two halves. Cut the two halves into slices, cutting diagonally across to make them a bit longer.

  3. Cut the pepper into strips, about as wide as the zucchini.

  4. Peel the outer layers of the red onion off and then cut it into four quarters.

  5. Pour a little olive oil in the base of an ovenproof dish, then add the vegetables and sprinkle a dash of olive oil over them. Season with sea salt and freshly ground black pepper.

  6. Bake for 20-30 minutes, depending on the chosen thickness of the vegetables.
