Baked mixed veggies with a touch of oil and seasoning to your taste. Mrs. Dash, McCormick seasoning and Clubhouse vegetable seasoning mix are all quick options if you don't know where to start. I usually have it with a serving of fish or mix tofu in when I add the veggies.

Recipe Ingredients for Baked vegetables

2 1tsp Olive Oil
85 grams Sweetpotato
84 grams Potatoes, Red, Flesh And Skin, Baked
153 grams Asparagus
65 grams Onions
136 grams Broccoli
148 grams Orange Hothouse Bell Pepper
172 grams Squash, Summer, Zucchini, Includes Skin
55 grams Sweetpotato

Recipe Directions for Baked vegetables

  1. Mix tubers with of oil and herbs/spices to your taste.

  2. Bake in oven.

  3. While tubers begin to bake cut up other desired veggies.

  4. Mix cut veggies with 2nd tsp of oil and more herbs and spices.

  5. Add veggies to tubers on same baking tray, mixing together.

  6. Continue baking until veggies reach desired level of cooked.

  7. Enjoy.
