This is not a fast omelet. Borrowed this recipe from carolafaver at delphiforums. Lavender, Literature, and Lace. PS calories are set for 3 servings. You can save calories by serving to 4 instead.

Recipe Ingredients for BAKED VEGETABLE OMELET

1 tbsp. olive oil
2 tbsp. onion, chopped fine
1 1/2 cups chopped broccoli
1 cup chopped zucchini
1 medium tomato, coarsely chopped
1/2 cup low fat milk
6 eggs
1/2 cup low fat cheddar cheese
1 Salt and pepper, as desired
1 Cooking spray

Recipe Directions for BAKED VEGETABLE OMELET

Preheat oven to 350°F. On the stovetop, sauté the onion in olive oil in a small cast-iron skillet or other oven-friendly cooking pan. After about 3 minutes, add broccoli, zucchini, and tomatoes and stir fry another 3 minutes. Layer the cheese on top of the broccoli, zucchini, and tomatoes. Beat milk, eggs, salt, and pepper until smooth, then pour over the vegetable mixture. Bake uncovered until the egg mixture is set, 35 ? 40 minutes. Let stand for 10 minutes before cutting. Serves 4.
