A healthy doughnut, good for satisfying a sweet tooth. Can use any kind of milk, such a rice, soy or 1% milk, and can top it with powdered sugar, cinnamon sugar, or sugar glaze (optional - not included in this recipe). Nutmeg is the key to their doughnutty flavor. Use donut pan/mini muffin pan and don't overfill - about halfway is good.

Recipe Ingredients for Baked Vegan Healthy Doughnuts/Donuts

2 2/3 cups white whole wheat flour
1/3 cup sugar
2 teaspoons baking soda
2 teaspoons ground nutmeg
1/2 teaspoon salt
1 cup unsweetened almond milk
1/4 cup canola oil
1/4 cup white vinegar
1 teaspoon vanilla extract

Recipe Directions for Baked Vegan Healthy Doughnuts/Donuts

  1. Preheat oven to 375 degrees. Lightly spray pan with cooking spray.

  2. In a large bowl, whisk flour, sugar, baking soda, nutmeg and salt. In a medium bowl, add milk, oil, vinegar and vanilla. Add the wet ingredients to the dry and whisk together quickly until just combined. Do not over-mix.

  3. Using a pastry bag or a large ziploc with the tip cut off, pipe batter into pans, making sure not to overfill. Bake for 10-12 minutes. Remove from oven and let rest for five minutes before unmoulding from pan. Dust powdered sugar or glaze if desired.
