A great way to get some extra protein in your lunch or dinner.

Recipe Ingredients for Baked Tuna Stuffed Tomatoes

3 oz tuna, premium albacore in water pouch
1 tbsp mayo, light
1 tsp garlic, minced
18 grams celery, chopped fine
10 grams monterey jack cheese, shredded
1 tbsp parsley
1 tsp lemon juice
1 tbsp bread crumbs
2 tomato

Recipe Directions for Baked Tuna Stuffed Tomatoes

  1. Preheat oven to 400 degrees.

  2. Mix all ingredients except tomatoes.

  3. Cut top off of the tomatoes and scrape out insides with a spoon leaving a cup to fill.

  4. Fill with half of the tuna mixture.

  5. Repeat with second tomato.

  6. Bake for 15 minutes on a cookie sheet or stoneware pan. Broil for 1 additional minute.

  7. Enjoy!
