Mediterranean way to cook fish fillets.

Recipe Ingredients for Baked Tuna with Capers and Olives

4 t olive oil
2 lb tuna, fillets
1 c canned tomatoes, diced, drained
1/2 t sugar
1 t lemon juice
1 T capers, drained and rinsed
1/4 c olives, chopped
1/2 c dried bread crumbs

Recipe Directions for Baked Tuna with Capers and Olives

  1. Heat oven to 400 degrees.

  2. Coat inside of baking dish with 1 t oil. Place fish in baking dish in single layer.

  3. Mix tomatoes with sugar and lemon juice in small bowl. Add capers and olives. Add salt and pepper as desired.

  4. Pile tomato mixture over fish.

  5. Distribute bread crumbs over the top and drizzle remaining oil over all.

  6. Bake 35 to 40 minutes or until fish is thoroughly cooked and sauce is bubbly and browned.
