Diced tomatoes are baked in olive oil and mozzarella to create a quick and beautiful side dish.

Recipe Ingredients for Baked Tomatoes

2 tomatoes, diced
2 tablespoons of extra virgin olive oil
1 salt, pepper to taste
1/4 cup of mozzarella cheese

Recipe Directions for Baked Tomatoes

  1. Dice tomatoes and place onto shallow baking sheet.

  2. Drizzle extra virgin olive oil onto tomatoes.

  3. Sprinkle salt and pepper onto tomatoes.

  4. Cover with mozzarella.

  5. Bake at 450 degrees or until cheese is melted and slightly browned.
