Rice seasoned with taco seasoning and rotel and then layer chicken on top of rice baked.

Recipe Ingredients for Baked Taco Chicken & Rice

16 oz chicken breast
10 oz can rotel diced tomatoes & green chilies
1 oz taco seasoning
1 1/2 cups long grain rice (uncooked)
3 cups water

Recipe Directions for Baked Taco Chicken & Rice

  1. heat over to 350

  2. in a 9x13 baking dish add 1 1/2 cup rice

  3. 10 oz can rotel tomatoes & green chilies

  4. 1 package of taco seasoning

  5. 3 cups water

  6. mix well

  7. layer chicken on top of rice

  8. cover with foil and bake 45 minutes
