Sliced baked sweet potatoes with fresh coconut, raisins, and a hint of citrus.

Recipe Ingredients for Baked Sweet Potatoes

2 sweetpotatoes
1/2 cup seedless raisins, plumped and drained
1 tsp dried orange peel
1/4 cup sliced almonds
1/4 cup grated fresh coconut
1 tbsp grated fresh ginger
3 tbsp lemon juice
1/4 cup oil

Recipe Directions for Baked Sweet Potatoes

  1. Bake yams until just tender. cool and peel. Cut yams in half crosswise; then cut each half into four lengthwise wedges. Arrange in the bottom of a glass baking dish.

  2. Mix together the raisins, orange bits, almonds, coconut and ginger. sprinkle mixture over the sweet potatoes.

  3. Combine the lemon juice and oil. Drizzle over the sweet potatoes. Cover with foil.

  4. Heat oven to 350 degrees. Bake covered 25 minutes or until potatoes are warmed through. Remove cover and serve.
