Recipe Ingredients for Baked Summer Squash Fries

1 squash, summer
1/4 cup flour
1/4 cup breadcrumbs
1/2 egg, beaten
1 tbsp milk
2 tbsp olive oil

Recipe Directions for Baked Summer Squash Fries

  1. Heat oven to 350.

  2. Cut both ends off the squash and cut in half lengthwise. Continue to cut the pieces lengthwise until they are the desired size and then cut in half widthwise.

  3. Beat egg and milk in a bowl. Combine flour and breadcrumbs in a second bowl.

  4. Dip each "fry" into the egg mixture and then into the flour/breadcrumb mix, coating all sides.

  5. Place them on a nonstick pan and bake in the oven for 30 minutes, turning halfway through.
