Eggplant and veggies stuffed and baked

Recipe Ingredients for Baked Stuffed Eggplant

1 medium eggplant
1/2 large onion
1/2 cup chopped chinese celery
2 cloves garlic
1/2 cup cooked black eyed peas
1/4 cup panko bread crumbs
1 oz feta
1 salt and pepper
2 tbsp panko

Recipe Directions for Baked Stuffed Eggplant

  1. remove meat from eggplant and cube. Chop and sautee veggies. Bake eggplant shell for 15 min at 350.

  2. Fill shells with veggie mixture and beans - bake for 20 min at 250, with panko topped on for last 10.
