Recipe Ingredients for Baked Spinach and Eggs

4 cups raw spinach
2 eggs
1 teaspoon butter
1 ounce mozzarella, part skim milk, low moisture cheese
1/16 teaspoon salt
1/16 teaspoon black pepper

Recipe Directions for Baked Spinach and Eggs

  1. Steam spinach in microwave 2 minutes.

  2. Dot with 1 tsp. butter.

  3. Break eggs on top of spinach.

  4. Bake at 350 degrees for 15 minutes.

  5. Add cheese on top and bake 3 more minutes.

  6. Sprinkle with salt and pepper.
