Recipe Ingredients for Baked Spiced Vegetable Samosas

2 cup all purpose flour
1/2 cup water
4 tablespoon extra virgin olive oil
1 small onion, minced
1 small carrot, minced
1 large potato, diced, parboiled for 10 minutes, and drained
1/2 cup frozen green peas
1 garlic clove, minced
1 teaspoon garam masala
2 tablespoons cilantro, minced
1/2 teaspoon salt
1/8 teaspoon cayenne

Recipe Directions for Baked Spiced Vegetable Samosas

  1. In a medium-sized bowl, combine the flour and water with 2 teaspoons of the oil and stir until a dough forms. Cover and let stand for 30 minutes.

  2. Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add the onion and carrot and cook, stirring, until softened, about 5 minutes. Stir in the potato, peas, garlic, garam masala, cilantro, salt, and cayenne. Cook until all the vegetables are soft, about 10 minutes. Set aside to cool.

  3. Preheat the oven to 400 F. Roll out the dough on a flouredboard into a thin 16″ square and cut into 4″ squares. Place a small amount of the filling to make a triangular shape. Seal the edges with a little water.

  4. Place the samosas on a lightly oiled baking sheet and brush lightly with oil. Place in the oven and bake, turning once, until browned on both sides, 12-15 minutes. Serve hot, warm or room temperature.
