Baked version of Chili's eggroll appetiser

Recipe Ingredients for Baked Southwestern Eggrolls

2 cups frozen corn, thawed
2 cups black beans
2 cups chopped spinach, thawed and drained
2 cups shredded chicken breast
1 cup shredded 2% cheese
4 oz chopped green chiles
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
20 egg roll wrappers
1 tbsp canola oil

Recipe Directions for Baked Southwestern Eggrolls

  1. Pre-heat oven to 425.

  2. Mix all the first set of ingredients in a mixing bowl.

  3. Lay out the eggroll wrappers (or tortillas) one at a time and use about 1/4 cup of the filling per wrapper. Roll them at an angle starting from one corner, folding in the sides.

  4. Lay the rolls seam side down on a baking sheet that you've brushed with oil or sprayed with cooking spray. Brush or spray the tops and sides of the rolls.

  5. Bake for 10 mins, then turn. Bake for an additional 10-15 mins (depending on the level of crispiness you want).
