My two year old son calls this Apple-Oat-Cake and I think that is a very fitting title and description. Easy to make ahead, cut into squares and freeze for quick single serving breakfasts.

Recipe Ingredients for Baked Soaked Oatmeal

2 1/2 c. Oats, Rolled, Regular Old Fashioned
1 T. whole wheat flour
1 3/4 c. LowFat Plain Kefir
1/2 c. coconut oil
4 eggs
1/4 c. maple syrup
1/2 tsp. salt
2 tsp. Cinnamon
2 tsp. Vanilla
2 c. dried blueberries
2 c apples, chopped
