Recipe Ingredients for Baked Snapper Veracuzana *Untested*

1 1/2 c sliced onion
2 tablespoons minced garlic
1 cup sliced red pepper
1/2 c chopped celery
2 tablespoons minced jalapeno
1 tablespoon capers, drained
29 oz stewed tomatoes, no-salt, drained
1/4 teaspoon fennel seeds
24 oz red snapper fillets

Recipe Directions for Baked Snapper Veracuzana *Untested*

  1. Coat a large nonstick skillet with cooking spray; place over med-high heat until hot. Add onion and garlic and saute 5 min until tender. Add red pepper and next 4 ingredients; cook 10 minutes, stirring often. Add tomatoes and fennel seeds; cook uncovered 15 minutes.

  2. Place fish in a 13x9x2 baking dish coated with cooking spray. Spoon vegetable mixture evenly over fish and bake at 400 for 15 minutes. Fish should flake easily with a fork.
