Recipe Ingredients for Baked Shrimp with tomatoes and feta

1 tablespoon olive oil
1 large onion
2 cloves garlic
19 oz can tomatoes
1/4 cup flat leaf parsley
2 tablespoons fresh dill
1 1/2 pounds raw medium shrimp
1/4 teaspoon pepper
2/3 cup reduced fat Feta

Recipe Directions for Baked Shrimp with tomatoes and feta

  1. Preheat the oven to 425

  2. Heat the oil in an oven proof skillet over medium high heat. Add the onion and cook, stirring until softened, about 3 ,minutes, then add the garlic and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to medium low and let simmer for about 5 minutes, until the tomatoe juice thickens. Remove from the heat. Stir in the parsley, dill and shrimp and season with pepper. Sprinkle the feta over the top. Bake until the shrimp is cooked through and the feta melts. About 12 minutes
