Baked Scallops Recipe

Goes well with brown rice and quinoa pilaf, also in my recipes.

Recipe Ingredients for Baked scallops

1/2 lb. bay scallops
1/3 cup sun-dried tomatoes
2 cloves garlic, minced
1/2 cup black olives, sliced
2 tablespoons white balsamic vinegar
1/4 cup white wine
1 teaspoon basil
1/2 teaspoon pepper

Recipe Directions for Baked scallops

  1. Drain tomatoes carefully, so you don't get too much oil.

  2. Toss all ingredients together in an 8 x 8 glass baking dish.

  3. Bake at 350 degrees about 30 min. (I usually use frozen scallops, decrease time to around 20 min. if thawed)
