Salmon with spinach and feta cheese baked in phyllo pasty shell

Recipe Ingredients for Baked Salmon Spanakopita

8 oz. spinach leaves
4 oz. feta cheese
680 g salmon
90 g margarine
6 sheet+dough phyllo pastry sheets

Recipe Directions for Baked Salmon Spanakopita

  1. Cook spinach in large saucepan until just wilted. Cool. Squeeze excess liquid from spinach. Chop finely.

  2. Combine spinach with crumbled feta cheese.

  3. Cut salmon into 6 portions. Cut lengthwise pocket down one side of each salmon portion (not quite through).

  4. Pack 1/6th of spinach and cheese mixture into each piece of salmon

  5. Bruch melted on 1 side of each pastry sheet. Fold pastry sheet to width of fillets. Place fillets on top and fold to form parcels. Brush top with margarine.

  6. Bake in 400 degree oven for 12 - 15 minutes until pastry is browned.
