Parsnips, Sweet Potatoes, Onions and Carrots

Recipe Ingredients for Baked Root Veggies

1 cup parsnips
1 cup carrots
2 cups sweet potatoes
1/2 red onion
2 tbsp olive oil
1 tsp sea salt
2 tbsp pepper

Recipe Directions for Baked Root Veggies

  1. Peel and julienne carrots, sweet potatoes and parsnips

  2. Cut red onion into thick slices

  3. Toss all veggies in olive oil until lightly coated and sprinkle on salt and pepper

  4. Spread on lightly greased baking sheet and bake at 425 until tender (about 20min)
