Baked Risotto with Tuna and Tomato

Recipe Ingredients for Baked Risotto with Tuna and Tomato

2 tbsp olive oil
1 onion, finely chopped
1 tsp crushed red pepper
1 tsp sea salt
1 cup Arborio rice
400 g can diced tomatoes
284 grams tuna packed in spring water
1/4 cup dried parmesan cheese
5 tablespoons sliced black olives

Recipe Directions for Baked Risotto with Tuna and Tomato

  1. Preheat oven to 390 degrees.

  2. In a large pan add the olive oil, onion, chilli and sea salt. Cook, stirring, for 5 minutes until the onion is soft and translucent. Add the rice and stir for a further minute.

  3. Add 1 cups water (or stock if you prefer) and the tomatoes and bring to a simmer.

  4. Stir in the tuna (and sliced black olives if using) and some freshly ground black pepper, then cover dish and bake in oven for about 20 minutes or until rice is cooked.

  5. Stir in a parmesan cheese. Serve.
