Recipe Ingredients for Baked Rigatoni, Sausage and Veggies

16 ounce Italian sausage
1/2 cup chopped onion
1 clove garlic, minced
224 grams rigatoni
1 cup Ricotta cheese
3 1/2 cups Prego spaghetti sauce
2 cups Mozzarella cheese, shredded
3 tbsp Parmesan cheese, grated
1 cup broccoli florets
1/2 cup green peppers, sliced
2 Roma tomatoes

Recipe Directions for Baked Rigatoni, Sausage and Veggies

  1. Saute sausage in medium skillet until well browned on all sides. Remove from pan; slice into thin pieces. (I use bulk sausage and break it up as it cooks)

  2. Add onion and garlic to pan with drippings; saute until onion is tender, but not brown. Add already steamed broccoli and fresh or frozen sliced green peppers; saute until tender. Add all to sausage in large bowl.

  3. Cook Rigatoni according to package directions for 10 minutes; drain.

  4. Combine Rigatoni, sausage mixture and Ricotta; mix well.

  5. Pour 1/2 cup sauce on bottom of 3 quart casserole. Spread 1/3 of Rigatoni and sausage mixture over sauce; cover with 1 cup sauce.

  6. Sprinkle 3/4 cup Mozzarella and 1 tablespoon Parmesan over sauce.

  7. Repeat layers of Rigatoni and sausage mixture, sauce, Mozzarella and Parmesan twice, ending with Parmesan. I added a layer of Roma tomato slices over the last layer of sausage mixture, and added the last layer of cheese over those.

  8. Cover; bake at 400 degrees for 20 to 30 minutes or until hot and bubbly. 6 servings.
