Recipe Ingredients for baked rice salad with peas, green beans, and corn

1 small onion
3 cloves garlic
1/3 cup olive oil
1 1/2 cups brown rice
2 1/3 cups chicken broth
5 oz frozen green beans
5 oz frozen peas
1 large red bell pepper
1 tbsp capers
3 tbsp white wine vinegar
5 oz canned corn
4 oz arugula

Recipe Directions for baked rice salad with peas, green beans, and corn

  1. Preheat oven - 350. Stud onion with cloves.

  2. Heat 2T of oil. Add oniona nd saute 3-4 min.

  3. Add rice and mix well. Add bay leaf and stock. Cover and bake in the oen until rice has absorbed all the stock - 20 min. Remove rom oven and let cool.

  4. Meanwhile, cook the green beans in a medium pot of boling water 5-7 min. Drain and let cool.

  5. Cook peas 3-5 min. Drain and let cool.

  6. Preheat broiler. Grill pepper.

  7. Place capers, oil, and vinegar in food processor. Blend.

  8. Transfer rice to a large salad bowl. Remove and discard onion cloves and bay leaf. Add green beans peas, corn, pepper and arugula.

  9. Drizzle with dressing and toss.
