Put simply, its easy to make kiddy friendly! so hard to find desserts which are gluten free for our veggie family and the kids love it!

Recipe Ingredients for Baked Rice Pudding

3 cups of cooked basmati rice
1 1/2 cups soy or rice milk
1/2 cup dried apricots
1/2 cup sultanas
3 of teaspoons brown sugar
1 1/2 teaspoons of vanilla
1 dash of cinnamon

Recipe Directions for Baked Rice Pudding

  1. Preheat oven to 325 degrees.

  2. Combine all ingredients in an oven-proof pot.

  3. Heat to just boiling.

  4. Remove from heat, stir and place uncovered in the oven.

  5. Bake for 30 minutes.

  6. Remove from oven and let rest for 5-10 minutes before serving.
