Any rice could easily be substituted. I hope this provides inspiration for changes.

Recipe Ingredients for Baked Rice Pudding

1.25 cup Rice, Brown, Medium-grain, Cooked
12 fl oz Almond Breeze Unsweetened
0.5 cup Pitted Dates
2 medium banana Bananas
1 pinch Ground Ginger Spice
2 tsp Vanilla Extract
1 tbsp Coconut Unsweetened

Recipe Directions for Baked Rice Pudding

  1. Cook rice as per directed until tender, drain if necessary.

  2. soak dates in warm water for 30 minutes.

  3. Preheat oven to 350 degrees.

  4. Drain dates and add to blender along with almond milk, banana, ginger, 1/4 tsp cardamon if desired and vanilla. Blend until smooth.

  5. Stir into rice. Pour into a 9x9 pan and bake for 30 minutes. Allow to cool a bit and garnish with the coconut. Serves 6
