adapted from Mark Bittman's "Simpler-than-Pilaf Baked Rice" in How to Cook Everything

Recipe Ingredients for Baked Rice Pilaf

2 tablespoons olive oil
1 teaspoon cumin seeds
1 teaspoon garam masala
1 onion, minced
1 carrot, minced
1 cup mushrooms, sliced
1 cups chickpeas
3/4 cups brown rice
3/4 cups pearl barley
3 cups water
1 salt
1 pepper

Recipe Directions for Baked Rice Pilaf

Preheat oven to 325. Heat olive oil. Add spices and cook 30 seconds. Add onion and carrot, saute until very soft. Add rice and barley and stir until coated with oil. Add chickpeas, salt and pepper, and water. Bring mixture to a boil and transfer to an ovenproof baking dish. Cover and bake for 35 minutes, then remove from oven and let stand 15 minutes. Correct seasoning and serve.
