Recipe Ingredients for Baked Rice w/ Black Beans, Corn, Tomatoes

4 oz diced green chilies
1 tsp cumin
1 tbsp canola oil
1 medium onion, diced
1 1/2 cups uncooked brown rice
2 cloves garlic, minced
2 tsp oregano
28 oz tomatoes, diced
1 2/3 cups vegetable broth
14 oz corn
14 oz black beans
1 tbsp epazote
1/2 tsp salt

Recipe Directions for Baked Rice w/ Black Beans, Corn, Tomatoes

  1. Preheat oven to 375*.

  2. Heat oil in large pot over medium heat.

  3. Saute onions 3 to 4 minutes until translucent.

  4. Stir in rice, garlic, oregano, and cumin and saute for 3 to 4 minutes.

  5. Add undrained tomatoes and stock, then corn, beans, chilies, epazote, and salt and bring to simmer.

  6. Transfer to 3 qt. covered casserole dish and bake for 45 minutes.

  7. Remove from oven and allow to sit w/ lid undisturbed for 10 minutes.
