Recipe Ingredients for Baked Red Snapper with Vegetables

1 T olive oil, divided
32 oz red snapper, 4 fillets, 8 oz each
1 onion, medium, thinly sliced into rings
2 plum tomatoes, thinly sliced
1 green bell pepper, seeded and thinly sliced

Recipe Directions for Baked Red Snapper with Vegetables

  1. Preheat oven to 375 degrees F. Brush a 13x9 inch baking dish with 1t of the oil. Arrange fish fillets in dish; brush with remaining olive oil. Arrange onion over fish; top with tomatoes and bell pepper.

  2. Cover dish with foil, bake until fish flakes easily with fork; about 20 minutes.
