Recipe Ingredients for Baked raspberry cheesecake

333 grams Cream Cheese Light
244 grams Creamy Cheese Fat Free
7.4 Cookie Coconut and Raspberry Gluten Free Cookies
2 medium Egg, Whole
0.7 large Egg, Yolk
175 grams Confectioners Sugar
50 grams Butter
0.75 cup Cream, Sour, Reduced Fat, Cultured
2 cup Raspberries
30 grams Flour
0.5 tsp Vanilla Extract

Recipe Directions for Baked raspberry cheesecake

Crush biscuits, mix with melted butter. Press biscuit mixture into base of baking tin. Bake for 5 minutes. Remove and allow to cool. Mix all the wet ingredients plus sugar and two tbsp of gf plain flour. Mix together so there are not too many lumps. Fold in fresh raspberries. Pour into baking tin on top of cooled base. Bake at Gas 4 for 40 minutes or so, depending on size of baking tin. It's done when it's browned a bit on top and slightly wobbly still in the centre. Allow to cool in tin. When done, serve with more fresh raspberries, or a raspberry sauce.
