Recipe Ingredients for Baked Radicchio & Mozzarella Pasta

1 T unsalted butter
1 clove garlic
1/2 medium onion
14 oz diced tomatoes, 1 can
2 c radicchio , about 1.5 heads sliced
1/4 c. half and half
1/2 lb pasta
4 oz mozzarella cheese, shredded
1/4 c Parmesan cheese, grated

Recipe Directions for Baked Radicchio & Mozzarella Pasta

  1. Preheat oven to 400F

  2. Bring salted water to boil & cook the pasta in it halfway

  3. While that's going on, melt butter in a saucepan, cook onion & garlic until a little softened, add tomatoes & thicken slightly (~10 min)

  4. Add the radicchio & cream & cook until radicchio is slightly wilted (~5 min)

  5. Combine the sauce and partially cooked pasta & put into an 8x8" pan

  6. Sprinkle both cheeses over the top & bake until golden with crunchy bits on top & pasta is al dente (~20 min)
