Lower fat alternative to mac and cheese that is tasty as can be!

Recipe Ingredients for Baked Pumpkin Pasta

12 ounces uncooked penne pasta
2 tsp olive oil
1 medium onion, finely chopped
2 cloves garlic, chopped
2 small zucchini, halved then sliced
1/2 tsp thyme
1 tsp sage
15 ounce pumpkin
1 cup part skim ricotta
1/2 cup water, reserved from pasta pot
1/2 cup shredded parmesan cheese

Recipe Directions for Baked Pumpkin Pasta

  1. Cook pasta to al dente package directions, less two minutes. reserve 1/2 cup water

  2. Heat oil in large skillet. Saute onion and garlic for 5-6 minutes. Stir in zucchini and herbs, saute another 3-4 minutes

  3. Stir in pumpkin and cheese

  4. Place drained pasta, reserved water and mixture in 11 x 7 baking dish and mix well. Sprinkle parm cheese on top and bake for 10-15 minutes until cheese is browned.
